Makhana Box started with one question: why does most packaged makhana taste like an afterthought? Here's what we do differently, and why.
Where it comes from
Grown in Bihar's lotus ponds
Makhana — also called fox nuts or lotus seeds — is harvested from the seed pods of the prickly water lily, grown in the shallow ponds and wetlands of North Bihar's Mithila and Seemanchal regions. India grows the overwhelming majority of the world's makhana here, and it's been part of Bihari diets for generations, long before it became a "superfood" label on a snack aisle.
The seeds are harvested, dried, and then hand-popped over heat — a labour-intensive process that turns a hard little seed into the light, airy puff you see in the pouch. We buy from growers and processors in that same belt rather than an anonymous bulk supplier.
Why roasted, not fried
The oil isn't the point — the crunch is
Most packaged snacks get their crunch from oil. Makhana doesn't need it — the seed is naturally light and airy once popped, so frying it just adds fat and calories without adding much flavour. We dry-roast every batch in small quantities, using heat alone to bring out that toasted, nutty character, then season it while it's still warm so the coating actually sticks.
It also means every pouch is made close to when it ships — not roasted months ago and left to sit on a shelf. That's the trade-off we've chosen: slightly less convenient to produce at scale, noticeably better in the pouch.
